If you like love garlic

Then you will love this...um, if you also like Feta cheese.
Here is the scoop: Take a cube of Feta cheese and cut it up into cubes -doing so makes it easier to blend in the garlic while you mash the cheese with a fork. If your cheese has been out of the refrigerator for a little while this isn't necessary.
Squeeze in 1 or 2 cloves of garlic on top of the cheese. Start mashing it up with a fork. Add a dollop of mayonnaise - this is only to hold the mixture together so go easy with it. You don't want the cheese crumbly, but you don't want this to turn all creamy with the mayo either.
Serve on tomato slices. That's it!
I have recently used the Feta/garlic mixture on pasta with pitted and chopped black olives. Think nice olives, not canned. If you have a market with an olive bar look for pitted Niçoise, or herb covered black olives. I'm sure the green olives would work also if you prefer those. Yum!

Craving some Allium sativum L.

I have this Middle Eastern herb mix called Za'atar that I like to mix with olive oil and some fresh garlic puree that we buy from the Lebanese Taverna market. I eat the herb/garlic mixture on a pita bread. Today I didn't have the garlic spread so I cut a clove in half and pressed it into my mixture of herbs and oil. I spread this on the pita and put it under the broiler till the bread got a little crispy on the edges.

So good and garlicky.. but apparently that wasn't enough to satisfy my craving for garlic. So I put these guys in the oven with a nice drizzle of olive oil and a dash of salt. They are SO good...I've eaten 5 cloves already! Something tells me I'm going to smell be very aromatic this week.
