If you like love garlic

Then you will love this...um, if you also like Feta cheese.
Here is the scoop: Take a cube of Feta cheese and cut it up into cubes -doing so makes it easier to blend in the garlic while you mash the cheese with a fork. If your cheese has been out of the refrigerator for a little while this isn't necessary.
Squeeze in 1 or 2 cloves of garlic on top of the cheese. Start mashing it up with a fork. Add a dollop of mayonnaise - this is only to hold the mixture together so go easy with it. You don't want the cheese crumbly, but you don't want this to turn all creamy with the mayo either.
Serve on tomato slices. That's it!
I have recently used the Feta/garlic mixture on pasta with pitted and chopped black olives. Think nice olives, not canned. If you have a market with an olive bar look for pitted Niçoise, or herb covered black olives. I'm sure the green olives would work also if you prefer those. Yum!

As a garlic and feta cheese fan, this looks fantastic! I am a complete tomato snob, however, and need to wait to try this until the summer when edible tomatoes will be in our area again. Thanks for the idea!
